First, a huge thank you to everyone for the kind comments some of you have left on my post about Kalyn’s Kitchen turning 12 years old! The positive feedback from readers really is one of the things that makes blogging so rewarding.

Now, can we have one more idea for cooking asparagus, since I seem to be unable to pass it up when I see it in the market these days! Waaaaay back in 2007 I made Roasted Radishes with Soy Sauce and Toasted Sesame Seed, which ended up inspiring this Roasted Asparagus with Soy-Sesame Glaze. And then for 10 years the recipe hung around in the archives with a photo that was so gruesome I actually deleted it when I took these new ones. 

For the updated version I kept the asparagus spears whole and just used a pastry brush to glaze them with the soy-sesame mixture for the last bit of the cooking time. Then just sprinkle some toasted sesame seeds on and you have the most amazing roasted asparagus dish you could ever want! 

And this recipe is pretty much perfect for any type of diet, even Paleo or Whole 30 if you use Coconut Aminos instead of the soy sauce. And asparagus is low in calories too! I’m adding this to my collection of favorite Asparagus Recipes, and I do hope you will try it! And for those people who just can’t get excited about asparagus, you might like Quick Roasted Broccoli with Soy Sauce and Sesame Seeds which has similar flavors!

A few years ago I got infatuated with a pre-cooked turkey Italian Sausage that I found at Costco and made a few recipes with it. Then Costco stopped carrying it (don’t you HATE IT when that happens) and I never found it again at another store. I am purposely not naming it, because you probably can’t find it either!

So recently I decided to re-do the recipe that used to be in this post and use the Jenni-O Turkey Italian Sausage I’m so fond of, and make it into a sheet pan meal. And since I was switching it up anyway, I got adventurous and switched the red and yellow bell pepper from the original recipe for Sweet Mini Peppers, another one of my Costco faves. (And the original recipe had red onion roasted with the sausage and peppers, which I skipped this time, but you can add that if you’d like.)

So here’s the new and improved version of the recipe which I’m now calling Low-Carb Roasted Italian Sausage and Sweet Mini Peppers Sheet Pan Meal. I am happy to no longer have a recipe here that no one can find the main ingredient for, and this updated version was a total yum! I especially loved the roasted sweet mini-peppers, which was something I hadn’t tried before.

Trust me when I say you will never miss the old recipe one bit! And if you like Italian sausage and peppers, this is about as easy as it gets for a quick low-carb and low-glycemic dinner. I think this would also be delicious with pork Italian sausage too, if you prefer that. 

I’ve been pretty enamored with Sheet Pan Meals this winter, but sheet pan meal weather is slowly changing into throw-something-on-the-grill weather, so don’t wait too long to make this or it might be too hot to use the oven!

My recipe for Instant Pot Low-Carb Loaded Cauliflower Soup has been such a hit on the blog and with people in my huge extended family that I found myself wondering why those same flavors wouldn’t also be a winner in a mashed cauliflower dish. And although it took me two tries to perfect the technique of making a cauliflower mash in the Instant Pot, the end result was as delicious as I had imagined!

However, just in case you have not yet joined The Church of Instant Pot, I want to make it perfectly clear that you can also make this delicious loaded cauliflower mash in a pan on the stove using the instructions from Pureed Cauliflower with Garlic, Parmesan, and Goat Cheese, and the results will be just as good! So take your choice on the method, but if you like the idea of mashed cauliflower with butter, sharp cheddar, cream cheese, bacon, and green onion, I hope you’ll give this a try!

Weeks ago I shared the recipe for Low-Carb No-Bake Cherry Cheesecake Dessert. And now that the weather is going to be getting warmer soon I’m following it up with this Fantastic Low-Carb Cheesecake with Cherry Topping that has to be baked. My bad. But I didn’t want to wait until next winter to share the updated photos for this recipe that I first posted in 2006, even if my timing was a little off!

I originally shared both those recipes in a single post, back in the days when blogging events were the thing to do and my friend Sam of Becks and Posh switched up an event usually called Sugar High Friday into one featuring recipes that were low in sugar. Sam has long since moved on from her blog, and I decided it was time for these two recipes to move on as well, each one into a post of its own with brand-spanking new photos!

And don’t think me lacking in humility by calling this FANTASTIC Low-Carb Cheesecake with Cherry Topping! Even though it really is pretty fantastic, the name came from the recipe I adapted from a low-carb cookbook; see below for more details! The original recipe called for a home-made graham cracker crust, which I skipped for this updated version as well, for even less carbs.

I know there have been quite a few Asparagus Recipes in the last few weeks, even Chicken and Asparagus, but this Chicken and Roasted Asparagus with Tahini Sauce was so amazing that I just couldn’t imagine waiting any longer to share the updated photos with you. And since I first made this in 2007, I think there’s a very good possibility that most of my current readers have never even noticed this back in the archives with a photo that was a bit ho-hum. Am I right?

You might not be familiar with Tahini, which is a paste made from crushed sesame seeds. It’s a common ingredient in hummus, baba ghanoush, and many sauces, and is used as a condiment on meat and vegetables in all parts of the middle east. The tahini adds amazing flavor to this sauce, especially if you use the Soom Tahini that I’m so fond of, but if you don’t want to buy Tahini for one recipe you can use creamy natural peanut butter instead for a slightly difference sauce that will still be delicious.

The original version of this coated the chicken in flour before browning it, and I couldn’t imagine why it wouldn’t work without that flour, and it did! And this recipe is as quick and easy as it is delicious. Start roasting the asparagus while you brown the large chicken breasts. Put the chicken on the sheet pan with the sheet pan to finish cooking in the oven while you whisk together the sauce. Slice chicken and arrange on a plate with the roasted asparagus, drizzle some sauce over, and dinner is on the table. If you like asparagus and Middle Eastern flavors this might become one of your new favorites!

When I first made Sauteed Asparagus with Melted Gorgonzola and Pine Nuts way back in 2006, I said it was one of the best tasting things I had ever eaten in my life.  Now years and years later this is still one of my favorite ways to cook asparagus, even though I’ve tried a lot more asparagus recipes since I first made this one.

Actually if the original photo had been better I’m sure I would have included this recipe with my 20 Favorite Low-Carb Asparagus Recipes, and when I realized that I made it again last week and took better photos! I’m still on a bit of an asparagus binge, and it’s still going on sale here, so there may be a couple more asparagus recipes coming up this spring.

My apologies to the asparagus haters; if you’re one of those people who just can’t get much asparagus love going, I think this recipe would be divine with those thin green beans that you get at Costco. Beans might take slightly longer to cook, but probably not much for the thin ones.

But for this One Pan Low-Carb Greek Skillet Chicken I just woke up one day with the recipe idea in my head, and the next time I cooked with Jake we tried it out and loved the result. 

It did take two tries to perfect the recipe so it was good enough to share with you. The second time we used my trick that creates Perfect Grilled Chicken Breasts to cut little crosswise slits in the chicken for more even cooking, and we also mixed spices into the petite diced tomatoes for a bit more Greek flavor.

But seriously, this recipe is so easy and quick you could definitely make it on a work night if you have some chicken thawed out in the fridge. Jake and I are both huge green olive fans, as you can tell, but if you’re not fond of that bitter taste, you could skip them or use regular black olives or sliced peperoncini instead. But whether you use the olives or not, this is just so good; hope you enjoy it as much as we did!
