Grain-Free Tabbouleh Salad (6 Ingredients!)

Grain-Free Tabbouleh Salad (6 Ingredients!)

I make this salad at least once a week. How am I just now sharing the recipe?

It’s such a healthy, easy, and versatile dish that pairs perfectly with all things Mediterranean. Without further ado, my take on tabbouleh salad!

This recipe is so easy, requiring just 6 ingredients, 10 minutes, and 1 bowl to make.

The base is fresh, chopped parsley, red bell pepper, and red onion.

Baked Egg and Roasted Veggie Casserole

Baked Egg and Roasted Veggie Casserole

You guys this might be the EASIEST recipe I’ve ever made.  Seriously. After a full week of meal prepping, I had a ton of leftover veggies that I wanted to use up so I thought why not roast them in a casserole dish and throw some eggs on top!  This dish is literally as simple as […]

Green Curry with Potatoes and Chickpeas

Green Curry with Potatoes and Chickpeas

Post sponsored by La Crema. See below for more details. I’m rather amazed that for as many curry recipes that I post, I’ve never shared a green curry recipe. Most days, I actually prefer this curry to the red. The sauce is packed full of herbs, coconut, and just a pinch of sugar to bring […]

Vegan 7-Layer Salad

Vegan 7-Layer Salad

Vegan 7-Layer Salad

Raise your hand if you A) are from the Midwest, B) have ever been to a church or community potluck, or C) have eaten at your grandmother’s table.

Hand raised on all three.

If you answered yes on any one of these, you’ve likely experienced a 7-layer salad. Say hello to its vegan cousin.

This recipe was actually a reader request, and seeing as I just mastered Vegan Mayonnaise and Coconut Bacon (and Eggplant Bacon), I figured it was perfect timing.

Butternut Breakfast Soup

Butternut Breakfast Soup

I love having soup for breakfast — it is everything I look for in the perfect morning meal. First and foremost, it provides optimal nutrition to start the day — high-quality protein, vegetables (esp. greens!), and a good dose of bone broth. Secondly, it is super convenient, all I need to do is re-heat a portion that I’ve made earlier in the week (that’s either …

Mediterranean Quinoa Stuffed Peppers

Mediterranean Quinoa Stuffed Peppers

This post was created in partnership with ALDI. All opinions are our own. “Are you considering becoming a creative person? Too late, you already are one. If you’re alive, you’re a creative person.” -Elizabeth Gilbert, Big Magic When I was in kindergarten, I entered a coloring contest. It was about eating healthy foods. Since it was the 1980s, the approach at the time was very food pyramid-centric. I drew a bunch of different “healthy” foods that I knew of in different categories: vegetables, dairy, meats, and so forth. My drawing ended up winning the kindergarten division, and it was displayed for all the school to see. The thing was, I was pretty uninspired with the whole thing. I drew it because it was an assignment. I did not feel creative about it in the least. The food pyramid seemed like a limiting set of rules set forth by the school and government. Cooking and eating healthy foods in my mind was B-O-R-I-N-G. To this day, I have the same feeling about programs that try to tell me how to eat healthy. Lists and check boxes don’t work for me. What does work? Creative freedom. I love eating beautiful, colorful, delicious food. […]
